Once the competition is over and the flower heads are looking 'tired' - Let it dry for a few weeks and you can harvest the seeds for eating...

Simply soak them overnight then bake them for about 40-45 mins until the hard shell begins to start cracking. Let them cool and you should be able to eat the seeds inside the shell!
